there is a little store down the road from us that sells the best baked potato salad ever.
but, y'all know i have to be careful with the carb intake, and i try to eat a lot of protein everyday as well to help my blood sugars stay nice and flat.
so, i decided to mix up my own concoction using greek yogurt (for the protein @ 18g/cup) instead of sour cream, and it turned out pretty good!
{this yielded enough for me and Anj to have a nice size "serving" for supper and then lunch the next day}
here's what you need:
1 cup plain 10% fat greek yogurt (you can choose the 1% fat, or the 10%. i chose the 10% because let's face it, fat is important to the taste of good potato salad)
1/2 c. mayonnaise (i used duke's light, just because we always do)
2 tbsp. ranch dressing
5 small potatoes or equivalent
3 strips bacon fried extra crisp
1/4 c. red onion diced supa fine
about 1/5 stick of butter melted
salt & pepper
here's what you do:
peel and boil potatoes(i cut mine down to about the size of an orange slice first)
strain them, and put in fridge to cool down before mixing in any ingredients____________________________________________________
meanwhile ...
go ahead and mix yogurt, mayo, ranch, and melted butter
fry bacon and cut into small bits
dice your onion
once potatoes have cooled down ...
mix the yogurt, mayo, ranch, butter in with the potatoes
add salt and pepper
taste.
adjust.
now add bacon and onions
taste again.
adjust, adding more salt/pepper if needed
the end.
in my humble opinion, it tastes best the next day after sittin in the fridge overnight.
